So you've heard me talk about the containers I use that make eating healthy, in the correct portion sizes, super simple and easy. And, you've heard me talk about clean eating, too. But if you've ever wondered what exactly I eat, then now is your chance to see! This is a typical "day in the life of a busy mom" eating plan. We are busy and on the go ALL the time, so if I am going to stay on track (we're not about to hit up the drive thru when we can prep a quick, healthy, and yummy meal), it requires a quick bit of planning ahead and packing a meal on the go when we are spending our evenings and weekends at kids' practices and games.
The good news is that I keep it super simple. Honestly, I couldn't roll any other way than simple. Our lives are too busy right now for any kind of elaborate planning and prepping. So that means, if I can do it, you can do it!
So, are you ready to see what a day in the life of my eating plan looks like as a busy mom of 4? (and if you also use the container system, container counts to go along with it!)
Breakfast: Slice of Ezekiel bread with almond butter (or even better, Nuttzo) - 1 yellow, 4 tsp
Snack: Shakeology (this was Chocolate Vegan with water, ice, oats, and a splash of vanilla extract) - 1 red, 1 yellow
Lunch: Spiralized squash with chicken meatballs and marinara - 1 red, 1 green, 1 purple
Snack: Greek yogurt with strawberries - 1 red, 1 purple
Snack: Freeze dried grapes - 1 purple
Dinner: Chicken, quinoa and broccoli casserole with cheese, along with a green salad - 1 red, 1 yellow, 1 green, 1 blue, plus an additional 2 green for the salad, along with 1 orange for salad dressing
It really can be this simple and easy. I enjoy the simplicity of the food and the prep, and at this point in our lives, the less effort and time spent, the better. It really CAN be done.
