Nom Nom Nom -- Our Fave, the Easy Way!

 I don't know about you, but school and activities are in FULL swing and things are getting crazy busy very quick!
We got our soccer schedule for my boys recently and not only are we scheduled for 3 practices per week out at the fields, but we also have from 1-4 games each weekend. Oh, and that doesn't include swimming and tennis. Oh, there's that thing called school, too! And, that's just my kids.....
With 4 kiddos and everyone running in different directions, there really isn't much time for meal prep and planning. Without my trusty crockpot (which sorely needs to be replaced), I don't know that I'd ever feed my family more than cereal and PBJ! 
This past week, it was just one of those days! It was the first day of school for my two oldest kids, I had errands, chores, laundry, and work to do, and wanted to take the time to do something fun with my two littlest boys who haven't started school yet. The day was FLYING by and meal prep was looking like a long lost memory. Then I thought ---- what about one of our favorite family meals, but in the crockpot!?!? Genius, I tell you! 
So, I gave it a try and guess what? It turned out even better than usual. So, I just HAD to share with you all because I have this sneaking feeling that many of you are in the same boat as I am -- rushing your kids around every which direction while trying to hold everything else together, too.

This is one of my family's absolute favorite meals and its easy to begin with, but even easier with the crockpot. I call this a recipe, but really, its not. I dump and pour until I think its right and go from there. So, you can also have some fun experimenting with spices to make it suit you and your family's tastes.


I started out with ground turkey that I get from Costco. I make at least 2 pounds of meat because my family flies through it, and 2 pounds will MAYBE give us a night of leftovers (I'm contemplating 3 pounds at a time -- dude, I feed 3 boys and a grown man in this house, not to mention my daughter who chows down this particular meal!)

All I did was unwrap the packages and throw the turkey into my crockpot. Then, add in the spices. I like chili powder, cumin, paprika, garlic salt, pepper, and onion powder. I dump and pour until the color looks right to me and I call it good until I check it later after its cooked. You can adjust the spices to suit your tastes! I've considered adding in a smoky paprika or chipotle chili powder -- they're on my list for another day!  I turned my crockpot on high at 1:00 pm. At 4:00 after I was home from picking up the kids at school, the house smelled wonderful and I gave it a check. It was cooking nicely! At that point, I used my handy Pampered Chef "meat masher" which I absolutely love!!! It is the best kitchen tool for breaking up ground meat nice and fine! After breaking it up, I added some additional spice, let it cook on high another 30 minutes, and then it was good to go!

Next, pick your fixings! We are pretty standard and go with cheese, avocado, lettuce, salsa, and these blue corn tortilla chips with flax seeds. You can also make it into a "bowl" with brown rice and black beans, or make it into tacos using corn or whole wheat tortillas. Really, the world is your oyster and you can do pretty much anything you'd like with it! :)

My kids like everything separate on their plate so they can mix it up the way they like, and everyone has their own system. I like a pretty simple taco salad, but I'm planning a taco flat out "pizza" with my leftovers!
